Filetto di dentice alle erbe provenzali e succo di pompelmo arrostito in padella - Fillet of sea bream with herbs of Provence and grapefruit juice

Oggi si riprende il lavoro, le due settimane di "paternità" sul lavoro sono finite e ahimè si rientra in ufficio ...

Vabbè bando alle ciance ... questa semplice ricetta l'ho preparata la settimana scorsa, ma solo oggi riesco a postarla, l'idea è nata portando avanti la ormai nota operazione svuota freezer. In uno dei cassetti avevo un bel dentice comprato tempo fa e quasi dimenticato tra tranci, petti, verdure, ingredienti e brodi vari ... Visto le temperature esterne, sabato c'erano 37 gradi ..., ho pensato che non era il caso di usare il forno e così ho deciso di sfilettarlo e arrostirlo in padella, in modo che rimanesse asciutto e insaporirlo e profumarlo con delle erbe di Provenza che avevo in casa ed un po' di succo di pompelmo.

Una ricetta molto semplice che anche la fra ha gradito, un piatto profumato ed in un certo modo estivo, veloce e semplice da preparare, volendo anche con altri tipi di pesce.

Ecco quindi la ricetta per questi ottimi filetti di dentice arrostiti in padella con pompelmo e erbe provenzali

Ingredienti per due persone

1 dentice
un cucchiaino di erbe provenzali
il succo di un pompelmo
sale
Olio evo

Pulire il pesce eliminando la teste e le viscere (io l'avevo già fatto prima di congelarlo), non buttatele vi ci si può fare un buon brodo, quindi sfilettarlo per la lunghezza partendo dalla pinna.

Nebulizzare un po' d'olio sulla padella, in mancanza del nebulizzatore potete ungerla leggermente con un pezzo di carta, quindi metterla sul fuoco e incominciare a scaldare, appena sarà calda adagiarvi i due filetti ricavati appoggiandoli dalla parte della pelle, far cuocere per un minuto, quindi spolverare con le erbe provenzali e bagnare con il succo di pompelmo, aggiustare di sale e far cuocere per alti due minuti, girare con attenzione i due filetti e terminare la cottura per un altro minuto (dipende dallo spessore del filetto).

Servire al centro del piatto e buon appetito a tutte e tutti, anche da parte della piccola abitante de la piccola casa: Ginevra!
